Sunday Funday

  I spent most of Saturday getting groceries and cooking for the week. It was pretty gloomy out so I figured I would flip schedules between the two days knowing that it was going to be sunny today. The rain, no matter how much, has a tendency to dry within hours. The ground at least feels pretty moist which will help as the temps begin climbing again.
  There is a lot of life in the neighborhood. People on the golf course, walking in the morning, riding bikes, or driving their golf carts to visit friends. Coming out of Kroger yesterday, I saw two people in a gold cart leaving and heading to the community across the street. I mean, why not? They can top out at about 35 mph and use a lot less gas/energy than a car.
  "Hey, get in the golf cart! We're going shopping!"
  My only disappointment is the lack of local coffee establishments. I am slowly discovering all the standard, commercialized places such as Starbucks and Dunkin, but no real hole in the wall, we roast our own beans type of place. I am spoiled by the many local businesses in Roanoke/Salem.
  Huntington State Park is really nice and a quieter beach than Myrtle. The community has a pool which is mighty convenient, being down the road and all. It looks like a good portion of my day will be spent there and at night when I get home from research.
  One thing about Southern weather, it's not fun to cook or bake in. Hence why I took the time to do a mass baking on a lousy day. It took me about five hours from grocery shopping to the last meal in the crockpot to finish. But I won't be coming home around 5:30 PM and dreading the fact that I have to put something together for dinner. It will be more like, open fridge, grab stuff, put it on a plate, and heat it up. Which is good because I have to walk the dog as soon as I get home.
  I did figure out that I do not need an alarm clock if I keep one of the bedroom blinds open. The light naturally wakes me up. I baked banana bread so that way I could grab a slice before taking the dog out for her morning walk. I will add coffee in the morning. It is nice and cool in the mornings.
  So what all did I bake or make? I also had to consider lunch and snacks too. I sent my best friend a list of what I did and she replied, "Holy Hell." Besides the banana nut bread, I also made salsa burritos, mushrooms and green beans in balsamic vinaigrette, roasted red pepper curry chickpeas, ham and potato casserole, chicken cheesesteaks in puff pastry, cucumber and tomato salad, carrots with peanut butter, cantaloupe, tomato and mushrooms for my eggs in the morning, iced coffee, and iced tea. Not to mention, I have stuffed shells with ricotta and spinach in the freezer, just in case. And I have enough potatoes left to make a baked potato or home fries.
  If I am going to relax at all today, I better do what I was going to do yesterday which is wash and give the dog a haircut. Later!
